GAZPACHO MANCHEGO

GAZPACHO MANCHEGO


The “Gazpacho Manchego” is a typical recipe of Castilla La Mancha, sometimes people confuse it with “Gazpacho Andaluz”, but they are totally different, as the “Gazpacho Andaluz” is a cold drink and the “Gazpacho Manchego” is a hot meal.
I´m from Albacete and my family has always cooked this dish, next I´m describing you how to prepare this delicious dish, first of all the ingredients are:
 
-       -   ½  Rabbit
-       -   ½  Chicken
-       -   1  Partridge
-        -  1 Garlic
-        -  ½  Green Pepper
-       -   2 tomatoes
-        -  2 Bay leaf
-         - 1 Onion
-       -   Black pepper
-          -“Torta para gazpachos”.It's the main ingredient of this recipe, is similar to the Italian “pasta” and is necessary to give some consistency to the meal.
-       .   Mushrooms

Preparation

Step one:  Cut up the rabbit, the tomatoes, the partridge and the green pepper into pieces and peel the garlic.

Step two: Cut the “torta” into small pieces and put it in a small saucepan with water and heat it up

Step three: In a fry pan with oil  fry for about two or three minutes the rabbit and the partridge, then add the bay leaf , the garlic, the tomatoes and the green pepper and fry it about five or ten minutes too.

Step four:  Add hot water and salt and cook it over a low heat for about twenty or twenty five minutes.

Step five: Add the pieces of “torta” and stir slowly.

Step six: Wash and cut the mushrooms and add it to the fry pan, finally you must end up cooking the meat for about fifteen minutes.
